Collards with Tempeh Bacon & Navy Beans

We received a bunch of collards in a surplus organic food box from Abundant Acres a couple of weeks ago. I usually finely slice collards and add them to a variety of different dishes, but I was looking for an option that would bring the collards front and centre. This recipe resulted from a chat I had with a chef whose work I admire on Instagram. I admire their work, creativity and general approach to cooking and life, and it was pretty awesome to be able to connect and chat about food. They had suggested a combo of bacon, ham navy beans, and collards, and I adjusted that suggestion to make the dish veg-friendly.  I have included liquid smoke, smoked paprika and smoked sea salt to bring some extra flavour to the dish. Hazelnut & Orange Pilaf

I created this recipe on a leftover night. Every week I try to factor in at least one leftover night, where we take whatever odds and ends are left in the fridge and put together a meal. In this case, I had some Get Grounded Fall Root Vegetable Soup in a container in the fridge, along with a head of kale that I intended to use in the stovetop method of this Cheesy Roasted Broccoli dish. I had a single orange left in our fruit basket, along with some fresh parsley and a jar of hazelnuts in the fridge. I consulted the Vegetarian Flavor Bible to see what other flavors might compliment what I had on hand, and added some garlic and ginger to the mix. Hearty Za’atar and Sorghum Soup

Back in my university days I remember popping into a cafe on the University of Toronto campus to pick up a quick and filling lunch. They frequently served Italian Wedding Soup, which I was a big fan of.
